Stopped at Jackson’s Meat House to check on the Down on Cow Bayou Seasoning stock and get more meat. Had to take the kids to the dentist. When I get home, I’ll break down what all I got when I get back home but got some of the cracklings today and they are so good! My favorite one was the ranch one! Aunt Nell loved the mild and MaMa Goldie!

If you are in the Beaumont area make sure to stop, get some of their meat and try some of my seasoning!

We got our first egg at the farm!

Had someone ask me today, how many chickens should I have to feed my family. Chickens are good layers (meaning generally 1 egg a day) from 1 yr old -3 years and then it’s hit and miss. For a family of 5 you can think 2 eggs per person minimum. So 10 chickens would be needed to feed a family of 5. If you don’t eat eggs that day then it could be used for other stuff. I prefer 20 chickens at a time because I do a lot of baking.

The most chickens I’ve had was 52 but you have to watch for c***s and chicken hawks because they will slaughter your chickens . So a good pen is definitely essential or a good guard dog.

“Lazy Man’s Cake”

A no‑fuss, stir‑and‑bake classic that somehow tastes like you tried harder than you did. Soft, moist, and kid‑approved — even by my son William, who doesn’t even like chocolate but absolutely loves this one.

Ingredients

• 1 ½ cups all‑purpose flour
• 1 cup granulated sugar
• 3 tablespoons unsweetened cocoa powder
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• ½ teaspoon salt
• ⅓ cup vegetable oil or melted butter
• 1 teaspoon vanilla extract
• 1 teaspoon vinegar
• 1 cup water
• 1 cup confectioner’s sugar (for dusting)

Directions

1. Preheat oven to 350°F.
2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. Add oil (or melted butter), vanilla, vinegar, and water. Stir until smooth.
4. Pour into a greased 9-inch square pan.
5. Bake 35–40 minutes, or until a toothpick comes out clean.
6. Let cool completely, then dust with confectioner’s sugar.
7. Slice, serve, and watch it disappear.
