🍉🍋 Watermelon Lime Popsicles 🍋🍉
Ingredients:
Red layer (watermelon):
3 cups cubed seedless watermelon
1 tablespoon lime juice
1 teaspoon honey (optional)
White layer (coconut):
1/2 cup coconut milk
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
Green layer (lime):
1 kiwi, peeled and chopped
Juice of 1/2 lime
1 tablespoon water
1/2 teaspoon honey (optional)
Directions:
Make the watermelon layer: Blend the watermelon, lime juice, and honey until smooth. Pour into popsicle molds, filling them about 2/3 full. Freeze for 1 hour or until firm.
Make the coconut layer: Mix coconut milk, maple syrup, and vanilla. Pour a thin layer on top of the frozen watermelon layer. Freeze for 30 minutes.
Make the green lime layer: Blend kiwi, lime juice, water, and honey. Pour on top of the coconut layer. Insert popsicle sticks and freeze until completely solid, about 3–4 hours.
To release the popsicles, run warm water on the outside of the mold for a few seconds.
