The secret to the BEST Creamy Pumpkin Pasta

🍭 INGREDIENTS 🍭
• 12 ounces (340g) pasta of choice (e.g., penne, fettuccine)
• 1 tablespoon olive oil
• 2 cloves garlic, minced
• 15 ounces (425g) can pumpkin puree (not pumpkin pie filling)
• 1.5 cups (360ml) chicken or vegetable broth
• 1 cup (240ml) heavy cream
• 1/2 teaspoon ground nutmeg
• 1/2 cup grated Parmesan cheese, plus more for serving
• Salt, to taste
• Freshly ground black pepper, to taste

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.
2. While pasta is cooking, heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
3. Stir in the pumpkin puree, chicken broth, and ground nutmeg. Bring the mixture to a gentle simmer, stirring occasionally.
4. Reduce the heat to low. Stir in the heavy cream, salt, and black pepper. Let it simmer gently for 5-7 minutes, allowing the sauce to thicken slightly.
5. Add the cooked pasta to the sauce in the skillet. Toss gently to coat all the pasta evenly. If the sauce appears too thick, add a tablespoon or two of the reserved pasta water until desired consistency is reached.
6. Stir in the 1/2 cup of grated Parmesan cheese until it is melted and fully incorporated into the sauce.
7. Serve immediately, garnished with additional Parmesan cheese and a sprinkle of fresh black pepper if desired.

A guaranteed crowd-pleaser every time.

The secret to insanely soft & chewy pumpkin snickerdoodles!

🍭 INGREDIENTS 🍭
• 2 ½ cups all-purpose flour
• 2 teaspoons cream of tartar
• 1 teaspoon baking soda
• ½ teaspoon salt
• 2 teaspoons ground cinnamon (divided)
• 1 teaspoon pumpkin pie spice
• ½ cup (1 stick) unsalted butter, softened
• 1 ½ cups granulated sugar (divided)
• 1 large egg
• ½ cup pumpkin puree (not pie filling)
• 1 teaspoon vanilla extract

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, 1 teaspoon of cinnamon, and pumpkin pie spice. Set aside.
3. In a large bowl, cream together the softened butter and 1 cup of granulated sugar with an electric mixer until light and fluffy. Beat in the egg, pumpkin puree, and vanilla extract until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
5. In a small, shallow bowl, mix the remaining ½ cup of granulated sugar and 1 teaspoon of cinnamon for the coating.
6. Roll dough into 1-inch balls, then generously roll each ball in the cinnamon-sugar mixture. Place them about 2 inches apart on the prepared baking sheets.
7. Bake for 9-11 minutes, or until the edges are set but the centers are still soft. They may look slightly underdone.
8. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

This one never disappoints! 🙌

Healthy Fall Snack: No-Bake Pumpkin Spice Protein Balls

🍭 INGREDIENTS 🍭
• 1/2 cup pumpkin puree
• 1/2 cup vanilla protein powder
• 1 cup rolled oats
• 1/2 cup almond butter
• 1/4 cup maple syrup
• 1 tablespoon chia seeds
• 1 teaspoon pumpkin pie spice
• 1/2 teaspoon vanilla extract
• Pinch of salt

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. In a large mixing bowl, combine the pumpkin puree, almond butter, maple syrup, and vanilla extract. Mix until smooth and well incorporated.
2. Add the vanilla protein powder, rolled oats, chia seeds, pumpkin pie spice, and pinch of salt to the wet ingredients.
3. Stir vigorously with a spoon or spatula until a thick, uniform dough forms. If the mixture seems too dry, add a tiny bit more pumpkin puree (1 tsp at a time); if too wet, add a sprinkle more protein powder or oats.
4. Cover the bowl and refrigerate the mixture for at least 30 minutes. This helps the oats and chia seeds absorb moisture and makes the mixture easier to handle.
5. Once chilled, scoop out approximately 1 tablespoon of the mixture and roll it between your palms to form small, bite-sized balls.
6. Place the finished protein balls on a parchment-lined plate or container.
7. Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.

Comfort food at its finest. 🍴

Easy Iced Pumpkin Coffee Cake: Your New Fall Obsession

🍭 INGREDIENTS 🍭
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 1/2 cup packed light brown sugar
• 1 tablespoon baking powder
• 1 teaspoon pumpkin pie spice
• 1/2 teaspoon salt
• 1/2 cup (1 stick) unsalted butter, melted and cooled
• 2 large eggs
• 1 cup pumpkin puree
• 1/2 cup milk
• For the Crumb Topping: 1/2 cup all-purpose flour, 1/4 cup packed light brown sugar, 1/2 teaspoon ground cinnamon, 1/4 cup (1/2 stick) cold unsalted butter, cubed
• For the Simple Glaze: 1 cup powdered sugar, 2-3 tablespoons milk, 1/2 teaspoon vanilla extract

👩🏻‍🍳 DIRECTION 👩🏻‍🍳
1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9x13 inch baking pan or spray with non-stick cooking spray.
2. First, prepare the crumb topping: In a small bowl, combine 1/2 cup all-purpose flour, 1/4 cup packed light brown sugar, and 1/2 teaspoon ground cinnamon. Cut in the 1/4 cup cold, cubed unsalted butter with a pastry blender or your fingers until the mixture is crumbly.
3. In a large bowl, whisk together 2 cups all-purpose flour, 1 cup granulated sugar, 1/2 cup packed light brown sugar, 1 tablespoon baking powder, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon salt.
4. In a separate medium bowl, whisk together the 1/2 cup melted butter, 2 large eggs, 1 cup pumpkin puree, and 1/2 cup milk until well combined.
5. Pour the wet ingredients into the dry ingredients and stir with a spoon or spatula until just combined. Be careful not to overmix the batter. Pour the batter into your prepared baking pan, spreading it evenly.
6. Generously sprinkle the prepared crumb topping over the batter. Bake for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
7. Let the coffee cake cool completely in the pan on a wire rack. While cooling, prepare the glaze: In a small bowl, whisk together 1 cup powdered sugar, 2-3 tablespoons milk (add more if needed for desired consistency), and 1/2 teaspoon vanilla extract until smooth.
8. Drizzle the simple glaze evenly over the cooled coffee cake. Slice and serve. Store leftovers covered at room temperature for up to 3 days or in the refrigerator for up to 1 week.

Weekend cooking just got easier.
