The vines are approaching flowering. Tiny green clusters extend from the shoots, each flower bud protected by fused petals that will soon release. Inside, the stamens and pistil are developing. When conditions are right, the petals will curl back and fall away, releasing pollen that lands on the stigma below. Pollination happens quickly in Riesling, usually within a few days. Not every flower becomes a grape. A 30% success rate is considered good. Too many berries and the clusters get overcrowded. The vines know what they’re doing.

We’re thrilled to have Sunset Series back every Thursday evening. Honestly one of our favorite things we do here. Kelly’s Kitchen will be joining us each week throughout the season, serving food that pairs perfectly with our wines. Pour a glass, grab some food, claim your spot overlooking the lake. Paul has built wineries across the globe, but Hillick & Hobbs holds particular weight. Named after his parents, Joan Hillick and Edward Hobbs, who met at Cornell just down the road, this estate represents something different than the others. His upstate New York roots run deep. He grew up on a family farm here, learned early how place shapes what you grow, then spent decades applying that lesson everywhere from Napa to Argentina. Returning to make Riesling where it started carries its own significance.
