Between the tanks and the barrels is where the vineyard’s work gets shaped into wine. Whole cluster pressed, 100% native yeast, primarily stainless steel and the occasional dash of oak on the Estate Dry Riesling Then there are the wines that ask for more. North Ravine goes entirely into 500L neutral puncheons. Lower Terrace, the same. The Botrytis Cinerea happens only when the season hands it to us. Those limited production, barrel-fermented wines go to our Slate & Soil members first. Three shipments a year, along with member events and complimentary tastings at the estate. The site decides a lot. We decide the rest.

This time of year the vines put all their energy into growing leaves to soak up sun. Over the next few weeks we’re pulling leaves back to let light reach the clusters. It also opens the canopy to airflow, which matters here more than most places. Our rows run east to west to capitalize on the wind coming off Seneca Lake, and in a humid New York summer that airflow is what keeps disease pressure down.

Later this month, Shake on the Lake brings The Comedy of Errors to the estate. Saturday, July 25 at 6 PM, five actors take on fifteen roles in this fast-paced tale of mistaken identity, slapstick, and Shakespearean chaos - all with Seneca Lake as the backdrop.

Cornell University sits about 30 minutes from the estate. It’s where Paul’s parents, Joan Hillick and Edward Hobbs, met as undergraduates in the 1950s - the beginning of the story that eventually led to this winery being named after them. If you’re planning a trip to the Finger Lakes for wine, Cornell deserves time on your itinerary. The campus is beautiful, the setting overlooking Cayuga Lake is striking, and knowing the personal connection to why Hillick & Hobbs exists makes the visit more meaningful. Worth the drive when you’re here.

Leslie is our Production Assistant, though that title doesn’t quite capture the range. Vineyard work, cellar tasks, bottling line, equipment maintenance - she handles whatever the day requires. You might see her dancing through the winery with headphones on between jobs. She came from New York restaurant kitchens where moving fast and wearing multiple hats is the baseline.
