customers.

Nothing complicated over here. Just a simple seasoning blend that comes out consistent every single time.

Coarse black pepper, garlic salt and regular salt. That’s it.

The trick isn’t having 15 different seasonings…it’s getting your ratios right and mixing it well so every pork butt, brisket or rack of ribs gets the same flavor every time.

Four 8 lb pork butts going on the Recteq

I keep my prep pretty simple…very little trimming, no binder, score the fat cap and get that seasoning down into every cut.

And one thing I’m big on: don’t waste your seasoning. I’ll show you how I season each one without contaminating the whole batch OR throwing half of it away when I’m done.

Then these are headed to the bottom rack of the Recteq for a long, slow cook.
