Hey folks! Just wanted to let you know what's happening with the SOUPer Lunch To Go 💜 page. I have recently been awarded a contract through Kentucky business enterprises for blind vendors. Five weeks ago, I opened up a restaurant with a six floors of vending machines that I run, own, and maintain. so I've put SOUPer Lunch To Go 💜 on hold for a while. It's an exciting opportunity for me to own a restaurant with all the trials and tribulations that go with it. The SOUPer Lunch To Go 💜 was a great training ground as I feature two soups every day with the salad bar, a pizza bar, Homemade entrée, fresh deli, grill and fryer, and breakfast specials every day. It's a great job and a great opportunity. We're only open Monday through Friday 7 AM to 2 PM for breakfast and lunch. No weekends, no evenings, and no holidays! It's the perfect food service job! And I'm loving every minute of it! Thank you so much to my loyal followers and especially to my loyal patrons! I'm still making soups and once in a while I'll put some out there for you too enjoy. Now let's use what we learned on Sunday about ham and I just happen to have a ham recipe here!

Glazed pineapple🍍 ham
Buy an Easter ham, after Easter! Usually on sale about 50% off. It's already spiral sliced so cut it off the bone.(You can save the bone to make bean and ham or pea soup later)

Now shingle ham slices in a baking pan. Put 2 slices of ham with one ring of canned 🍍pineapple and a 🍒cherry in the center of the pineapple. Then put another 2 ham slices, remember to repeat the pineapple and cherry step, shingling. Do that until you have enough portions to feed who you're feeding, or until your canned 🍍pineapple runs out! 😀 save the pineapple juice for later recipe, or drink it! It's delicious!

Prepare glaze:
• 3/4 cup brown sugar
• 2 tablespoons apple juice

•2 teaspoons Dijon mustard
• 1/4 teeth spoon each of salt and pepper

Whisk together.


When you're ready to bake, preheat the oven to 400°F. Drizzle the glaze (not all of it) over the top of the ham slices. Cover pan with foil and bake for total of 20 minutes. Remove the pan several times during the 20 minute baking time to pour more glaze on. About two more times during the cooking period. Remove from oven, plate onto a nice serving dish, and serve! Enjoy! 💜

In some countries such as the United States, ham is a traditional Easter meal because historically, pigs were slaughtered in the fall and the hams were cured and prepared for eating during the spring holiday of Easter.

Another "did you know "? Is that my phone does not have a ham emoji. So this text is rather flavorless! Enjoy your hams and have a wonderful and happy Easter! 💜

Since Sundays "did you know" was about eggs, I thought I would give you a great egg 🥚recipe!

A frittata is an Italian egg based dish similar to an omelette or a quiche. It is filled with different meats, vegetables, and 🧀cheeses. The difference between a quiche and a frittata?? A quiche has a crust like pie dough. A frittata has no crust. Thereby, you can make it Pretty much carb free!

Here is an easy breakfast frittata recipe:

6 eggs 🍳1/2 cup heavy 🥛cream
1 teaspoon 🧂salt
1/2 teaspoon black pepper
Four strips 🥓bacon, diced
1 cup 🧅onion, diced
1/2 cup 🍅tomatoes diced
4 cups spinach
Half cup shredded 🧀cheese

Preheat oven to 350°
In a large bowl, whisk eggs, cream, salt & pepper
Refrigerate until ready to use
In an oven safe 🥘skillet, cook bacon. Once cooked, remove bacon and set aside
Add onions to the same pan and cook until translucent
Add tomatoes and spinach and cook until spinach is slightly wilted.
Add bacon back to skillet and blend together.
Add egg mixture and cheese into the skillet
Stirring ingredients together. Put in oven to bake until firm in the middle. About 15 minutes.
Remove from oven and top with green onions if desired.
Cutting into pie shape wedges and serve!

About the correct way to crack 🐣eggs?

The best way to crack an egg is on the countertop, flat surface, and not on the corner or edge of the pan or bowl. When cracking an egg on the edge of the pan or bowl, you risk getting tiny eggshell fragments inside the egg as well as a possibility of breaking the 🍳yolk. When cracking an egg on the edge of a bowl, the egg shatters into tinier pieces. So take your egg and gently crack it once or twice on the countertop and then pull apart with your thumbs.

When cooking eggs, scrambled or fried 🍳in a pan, cook them on lower heat. Most people cook them on high heat and they burn easily. Especially if you're adding any ingredients into your scrambled eggs. That increases the burn factor if you add cheese or cream, milk, etc.

There are 1 million ways to make hard boiled🥚 eggs. And everyone has their own recipe. If you don't want to fool around with boiling water, use your air fryer! That's right! An air fryer works perfectly. Put 6 to 9 eggs in your air fryer and cook for 15 minutes at 270°. Immediately immerse cooked eggs into an ice 🧊bath. This stops the cooking process as well as it makes the egg easier to peel. Inside the shell, the whites pull away when submersed into an ice bath. If your egg has a green tinge around the edge of the yolk, it's because you cooked them for too long. There's a chemical process that happens in the egg when boiled too long or when not immersed into an ice bath. It's perfectly safe to eat, just a little offputting in color.

TRIVIA fun fact: everyone is familiar with a chefs 👩🏼‍🍳hat? Called a "toque", there are 100 pleats in a chefs hat. This, in modern times, signifies the 100 different ways of cooking an egg! And now you know! 💜

🧅🫑🧄🌶️🍅🫚🌽🍋🥚🧈🥕 RECIPE CORNER 💜

Delicious basil pesto!
This delicious condiment can also be used as a pasta sauce, sandwich spread, salad dressing, etc. Only limited by your imagination!

There are several recipes that I use. This one is for a creamy blended pesto. I will follow it up with a fresh herb pesto.
-• 3 cups chopped basil
• 1/3 cup pine nuts
• 1/2 cup Parmesan cheese
• 1 teaspoon sugar
• 1 1/2 teaspoons salt
• two garlic cloves
• 3 tablespoons lemon juice
• 3/4 cups olive oil

Blend all ingredients together in blender or with immersion blender until a smooth creamy sauce.
Toss this creamy pesto with fresh cooked pasta for delicious side dish, or add pan seared chicken cubes for a delicious entrée! Top with additional Parmesan cheese! 😋

Fresh herb pesto
• 2 cups chopped basil, fresh
• one cup chopped oregano, fresh
• one/3 cup pine nuts, chopped
• one/3 cup freshly grated Parmesan cheese
• 3/4 cups extra-virgin olive oil
1 tablespoon fresh lemon juice
• one 1/2 teaspoon salt
• 1/2 teaspoon course ground black pepper
• 1/2 teaspoon red pepper flakes (optional)

Place all ingredients in a medium bowl. Whisk together until well blended. Refrigerate and serve.

Use the fresh herb pesto on a grilled chicken sandwich. Brush the chicken with the pesto sauce and grill until done. Serve with additional pesto on the bun. Add your favorite toppings, like bacon, pepper jack cheese, lettuce, tomato, and roasted red peppers! Delicious! 🥰💜

Dented cans can save you money?

Recently I was on a conference call when they were talking about food safety. A woman in the audience, not a presenter, brought up the fact that dented cans inner lining could be cracked and poison your food. It seemed concerning to me so I did some research. Here's a fun fact! Dented cans cannot leak poison from their inner lining into your food. Many supermarkets discount dented cans because people have misnomers about them. Feel safe in eating dented cans. Well…… Not eating dented cans, but eating the food inside dented cans! 🤪As long as the can has not been opened in anyway, the food is safe! It should be noted that once you open the can, do not store the food inside the can in your refrigerator. Transfer it to a refrigerator safe sealed container. It will avoid that metallic taste that can come from storing the food inside the can once it's opened. Some grocery stores And supermarkets discount their cans so enjoy the savings! 💜

After this weeks "did you know" segment, I just had to share a homemade pasta recipe. Homemade
fresh pasta (any shape)

•2 cups flour,
•three eggs,
•Half teaspoon salt,
•half teaspoon extra-virgin olive oil
Instructions:
Step one: Mound flower on clean work surface, make a deep divot\well in center of flower mound.
Step two: Break the eggs into the well.
Step three add the salt and olive oil to the hollow center and gently mix together with a fork, gradually starting incorporating the flower by pulling in the flower from the sides of the mound.
step 4 as you incorporate more of the flower, mix altogether. make a ball with your hands or scraper until it comes together if it is too dry add a little water, too wet or sticky add a little flower. Knead with your hands
until it becomes elastic about 8 to 10 minutes. cover it with plastic and let it rest for 15 to 20 minutes
step seven you can store in the refrigerator for up to 24 hours but allow the dough to come to room temperature before rolling out.
Step eight: flower rolling pin, rolling surface, and your hands. Tip dough onto flowered surface and begin to roll out from the center to the edges.
Roll out to desired thickness.
Step nine: cut into shapes. Either thin strips for linguine, thicker for fettuccine, and really wide for lasagna. Or cut into squares to make homemade ravioli.
Step 11: gather excess pasta pieces and form into a ball again. Re-roll out flouring your surface, hands, and rolling pin. Cut into more shapes.
Step 12: drop into heavily salted boiling water. Since pasta is fresh, it will only take minutes to cook. Don't overcook! Keep testing while cooking to achieve desired doneness.

Enjoy your homemade creation with your favorite sauce! There is nothing like fresh homemade pasta. And you'll get a sense of pride serving to your family and friends as they are amazed at how awesome and delicious this pasta is.

There are approximately 350 different types of pasta varieties available in North America. many of those are the traditional pasta recipe in different shapes. Some are made from vegetables, beans, legumes, rice, etc.
The every day pasta we eat is made from flour and water. Some are made with flour, water, and egg. Still others are made from flour, water, egg, and salt.

There are over 600 different styles and shapes of pasta worldwide.
We all know spaghetti, elbows, fettuccine, lasagna, rigatoni, and shells. But do you know what the following are?
Ditalini?
Bucatini?
Cellentani?
Farfalle?
Orzo?
Cavatelli?
Pappardelle?
Orecchiette?
In 1991, Chef Boyardee released canned pasta in the shapes of the Teenage Mutant Ninja Turtles! I'm pretty sure it didn't taste like sewers or turtles, but never having tried them, I can't be sure! 🤪

So why have so many shapes of pasta if they're all made from the same ingredients? It all has to do with the sauce you serve them with. Also, whether they go into soups, are baked, or served on a plate with your favorite sauce. The wider the noodle the hardier the sauce. So a heavy meat sauce would be served with a pappardlle while a lighter garlic and olive oil would be served with an Angel Hair pasta.
