On this Mother’s Day Weekend, I think it’s only fitting to make one of my favorite dishes my mama used to make!

When I was a kid, my mama would always make “taters and onions” which was a simple roasted potato dish that was just layers of thinly sliced potatoes and onions with lots of butter and salt and pepper! So simple, yet so delicious!

As I am prepping these potatoes, I can’t help but think of my mama! Ain’t that one of the best things about passing down recipes from generation to generation?

Each time I make one of my mama’s dishes, I instantly get a smile on my face and my mind is filled of so many wonderful memories of her!

What are some of your favorite recipes from your mom or grandma? I’d love to hear them!

When Taco Tuesday falls on Cinco de Mayo…. You HAVE to do something special!!

Today’s menu is some brisket birria tacos! I started out this morning with a brisket flat and I seasoned it up with a little Valentina hot sauce, Sazon seasoning and Spanglish Asadero Carne Asada seasoning.

This brisket flat is in for a 3-4 hour smoke bath on the Recteq RT-700 until it’s ready to be panned up with some chilis, tomatoes, beef stock and seasoning! Stay tuned!

Tonight’s dinner was homemade tater chips sliced super thin on the mandolin with homemade ranch and shrimp Po”Boys with homemade remoulade sauce!

This was a fantastic dinner! Something a little different!

It was a COLD & WINDY day but we had a blast providing lunch for the Fishers of Men Legacy Series tournament today at Lake Mackintosh!

The Gospel was shared by Mr. Larry Jacobs as everyone enjoyed chowing down on pulled pork sandwiches with homemade BBQ sauce, baked beans, coleslaw, chips, and cookies!

We even got to bless a couple guys that were stuck at the boat ramp trying to get their boat motor to start. They seemed to thoroughly enjoy the sandwiches we took to them!

A special thanks to my smokin’ hot wife for all her help today!!! Although, she did mention being COLD several times! 😉
