Have you ever seen a flying squirrel? Neither had we until we cut down a dead tree and found a nest. There were 7 flying squirrels in there! We felt bad about unintentionally displacing the poor things, so we fixed up their tree and propped it back up for them.

It’s been awhile…
The end of summer brings so much work around the homestead. The garden is almost done, so we’ve been picking, washing, processing and canning all kinds of things! We made tomato soup, Italian seasoned tomatoes, and spaghetti sauce with meat from the tomatoes (only after eating our fill of them fresh, of course). We didn’t yield very many potatoes this year, and the rabbits got to most of our carrots, but we were still able to put up a few quarts of vegetable soup. Nate stuffed a gallon jar with pickled pepperoncini peppers and has enough ready for another gallon. He’s got a crock of peppers fermenting for hot sauce and we still have to make cowboy candy and hot pepper jelly. And figure out what to do with the rest of the peppers, lol. Anybody got any pepper recipes??? We’ve already made some killer poppers 😋
