Ever wonder what "free-range" actually means on a chicken label?
By USDA definition, it means the birds have "access to the outdoors." That's it. No minimum time outside. No minimum space. A small door at the end of a barn housing thousands of birds counts.
Most free-range chickens never set foot on grass.
Our birds don't have a door to the outside. They ARE outside. They live in open-air pasture shelters that get moved to fresh grass every single morning. No barn. No concrete. No loophole.

Tomorrow's the 4th and our June batch is almost gone.

If you've been thinking about trying pasture-raised chicken, this is the nudge. Once these birds are spoken for, the next batch isn't until August.

We only raise about 90 birds at a time. Small batches, moved to fresh grass every morning, processed at a USDA-inspected facility, vacuum-sealed and ready for your freezer. When they're gone, they're gone.

Your grill and your family deserve better chicken this weekend.

If you're firing up the smoker or the charcoal for the 4th, here's an honest tip from a guy who raises it and cooks it:

Thighs and drumsticks are the move. They're more forgiving on the grill, harder to dry out, and they pick up smoke like nothing else. Breasts are great but they'll punish you if you look away for five minutes. Dark meat just sits there and gets better.

We posted our go-to brine recipe on this page — check the pinned post. A few hours in the fridge before you cook and you'll wonder why you ever skipped that step.

The difference between pasture-raised and what's in the store cooler isn't subtle. You'll know it on the first bite, and so will everybody at your table.

Brining is the single biggest upgrade you can make to any chicken dish — and it takes about 5 minutes of actual work.
