Ravioli Casserole

What you need:
I pkg frozen ravioli (I use cheese ravioli, pick your favorite flavors.)
3 jars sun dried tomato Alfredo pasta sauce (Kroger carries this flavor but feel free to substitute another favorite.)
1 1/2-2 pounds ground beef, browned and seasoned generously with Italian seasoning, onion powder, garlic powder, sslt snd black pepper
(Optional: 2 tablespoonsof finely chopped sun dried tomatoes can be added to the beef as it cooks.)
2 packages Italian blend cheese

Large casserole dish
Frying pan
4-quart pot of boiling salted water

Brown ground beef, adding seasonings and sun-dried tomatoes or other add-ins as it cooks. Drain or blot out all rendered fat.

Boil frozen ravioli in salted water for about 3 minutes .

Layer sauce, then ravioli, then seasoned meat, and then cheese. You’ll have 2+ layers of everything. Save 1/3 of your cheese for the final topping .

Cook for 1 hour at 325. Add remaining cheese and continue baking just until the cheese is melted. Allow the casserole to sit for 5 minutes before serving .

Yeast Rolls

What you need:
1 cup warm water
1/4 cup sugar
1 package instant dry yeast
3 1/4 cup all purpose flour
1/2 teaspoon salt
1/4 cup vegetable oil
1 egg

Stand mixer with dough hook
Large baking sheet
Cooking spray or butter to grease pan
Butter to coat finished rolls

The oven with just its light turned on provides the perfect place for your rolls to rise! As soon before you begin as possible, turn on your oven light and adjust your oven racks if necessary to accommodate your mixer’s mixing bowl.

Combine the warm water, sugar, and yeast in your mixer’s bowl. Allow to sit for 10 minutes for the yeast to “bloom.”

Combine 1 cup of your flour and the salt and add. Mix for 2 minutes.

Combine the oil and egg and add. Mix for 2 minutes.

Slowly add the remaining 2 1/4 cups of flour and mix well.

Remove the bowl of dough from your mixer. Cover it with a dish cloth and allow it to rise (in the oven with the light on, or in another warm area, until doubled—about 45 minutes .

Scoop the dough onto a floured countertop and knead and turn it until it’s smooth. It may be just a little sticky and thats ok. If it sticks to your hands too muchh, add tiny sprinkles of flour until it’s manageable.

Divide your dough (use a blunt knife or dough cutter) until you end up with 16 rolls. Roll the individual rolls between your palms or between your cupped hand and the countertop until smooth, and place on a greased baking sheet. Flatten them just a little, remembering they will rise and spread.

Cover with a cloth and allow to rise (in oven with light on, or in another warm spot) for one hour. Remove before you preheat
the oven.

Preheat your oven to 350 now, and bake the rolls for about 20 minutes or until lightly browned . Remove from oven and brush generously with melted butter.

If you like your rolls to be tall, place them close together on the pan.

This recipe doubles very easily, and will still fit in a stand mixer’s bowl.

Chex Mix

Ok, this is NOT my recipe but here it is in case you’d like to make it. The recipe is also on the back of the Chex cereals featured in the recipe.

Yeah, you have to buy 3 boxes of cereal. Go ahead and plan to make about 2 1/2 recipes based on the amount of cereal you’re buying.

Do not attempt a double recipe. One recipe is a lot to manage stirring .

Buy the stick pretzels and break them in half. Otherwise theyre pretty big compared to the other items in the mix.

I generally ignore the bagel chips in the recipe because they’re hard to find. I occasionally find the Ghiardettos rye chips in stock at Walmart at mid-week and they’re yummy but still optional.

Sweet Potato Casserole

Beat together the following with a mixer:
Approx 5 medium sweet potatoes, baked, cooled & peeled (6 cups or so)
1 stick butter, melted
2 eggs
1/2 cups milk
1 cup sugar
1 teaspoon vanilla extract

Pour into a greased baking dish.

Top with a crumble made of the following:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/4 cup (1/2 stick) melted butter

Bake at 350 for approximately 30 minutes

I bake my sweet potatoes the night before and let them cool on the counter, then slip off the peelngs the next morning to prep the casserole.

You can substitute mini-marshmallows for the crumble topping. If you do, bake the casserole for 20 minutes first, then add the marshmallows and bake 10 more minutes. Keep an eye on it so it doesn’t burn.

Beef Enchiladas

You’ll need:
2 pounds fresh ground beef
2 20-0z cans Red Enchalada sauce
1 8-Oz pkg (2 cups) shredded Mexican cheese or grated queso cheese.
(You can substitute any cheese you prefer. Just be mindful that cheddar will add grease to the dish.)
2 envelopes taco seasoning
1 8-count package of burrito-sized flour tortillas
Large greased casserole dish.
Sour cream and other favorites for serving

Brown and drain ground beef. Add taco seasoning and 1/2 can of enchilada sauce. Once combined , add 1/2 pkg (1 cup) of cheese. Simmer 5 minutes.

Add a large portion of the meat mixture to each tortilla, roll up and place in the casseroledish with seam side down. (See photo for hints on how to roll.)Repeat for all 8 tortillas. If you have extra filling left just mix it into the sauce in the next step.

Cover enchiladas with 1 full can of enchilada sauce. Use a spoon or your washed fingers to help the sauce get between all the rolled-up enchiladas.

Bake at 325 for 1 hour or until bubbly throughout. Add the rest of the cheese and heat for 5 more minutes to melt the cheese. I use the remaining 1/2 can of sauce to add to my leftovers as I package them, or you could use it as you plate up.

You can also make 1/2 recipe easily by halfing all ingredients and substituting taco-sized tortillas and a smaller pan.

Each burrito is a hearty serving. They’re easier to serve if you cut them in half.

Plan for ingredients so far. This will be a vegetarian/diabetic recipe once final. A good side dish with meat/pasta/rice.

2 medium yellow squash
2 medium zucchini
2 large sweet yellow onions
8 Oz. Sliced mushrooms
1 pkg mini carrots
1 pound asparagus
1 pound grape tomatoes
1 large yellow (or red) bell-type sweet pepper
1/8 tsp salt
1/8 tsp ground black pepper
1/8 tsp Italian seasoning
1/8 tsp garlic powder
1/8 tsp onion powder
2 Tablespoons olive oil
1 stick butter

Cut all vegetables into moderate slices. Add oil and seasonings . Toss to combine . Divide into 2 large casserole dishes. Cut up the stick of butter and dot it over veg in both dishes. Cover with foil. Bake at 350 for 1 hour.

Remove foil and cook 30 minutes . Combine into one pan and cook uncovered 30 more minutes.

Ok so this took some time but was really good.

Critiques:
Love asparagus but not sure how much flavor it actually brought to the party.
Same for the orange bell pepper. Need another taste test.
More onions Definitely.
Double the mushrooms next time??

Great recipe so far. The fresh veg cooks down A LOT due to water content.

We enjoyed this as-is and agreed that it could go on different journeys with soy sauce, spicy pepper, noodles, or rice. Also with different proteins added after cooking.

Southern Fried Okra

You’ll need:
12 or so medium to large fresh okra pods
(About 2 cups once sliced)
1 Tablespoon milk or buttermilk
1/4 cup self rising flour
1/4 cup cornmeal mix
Salt to taste

Slice okra into a large mixing bowl. Add 1 Tablespoon milk and combine well. Salt this mixture well. Combine flour and cornmeal mix and pour over the okra mix. Turn the mix to coat the okra. If the mix is still moist, add more cornmeal a little at a time until it doesn’t stick together.

Heat 1/2 inch of vegetable oil in a large frying pan, until a piece of okra added to it sizzles. (I use the high setting but your stove may vary.) Add the remaining breaded okra to the oil in a single layer.

Stir and turn the okra continuously with a slotted spoon until browned. Remove to a plate lined with paper towels. Salt to taste.

This recipe makes 2 large servings.

Once breaded, the okra can hold for a long time, so you can get it to that stage, then fry it at the last minute before serving.

Strawberry-Pretzel Salad

What you need:
3/4 cup butter or margarine
3 Tablespoons brown sugar
2 1/2 cups crushed pretzels
1 ea. 6-oz pkg strawberry jello
2 cups boiling water
1 pound frozen strawberries, sliced
1 ea. 8 ounce cream cheese
1 cup sugar
1 ea. 8 oz Kool Whip

Crust:
Mix crushed pretzels, brown sugar & melted butter. Press into 9” X 13” baking dish. Bake at 350F for 10 minutes. Remove from oven & cool.

Dissolve jello in boiling water. Add partially thawed strawberries. Cool in refrigerator until mixture begins to set.

Cream sugar & cream cheese; fold in Kool Whip. Spread over cooled pretzel crust.

Pour semi-set jello mixture over the cream cheese mixture.

Refrigerate until firm. Cut into squares to serve.

Note: If serving a crowd, for an extra flourish you could add a dollop of canned squirt-on whipped cream and a fresh strawberry slice to pre-plated servings.

Pickled Okra

You’ll need:
12 1-pint mason jars, lids & rings (A new case of jars includes all this.)
2 gallons of Fresh young okra, 4 1/2” and smaller (2 very full 1-gallon zipper bags.)

If you don’t already have a jar grabber (see pics) I strongly urge getting one. Ive done pickles without one but I promise your hands will thank you!

For your brine:
8 cups 5% white vinegar
8 cups water
1 cup salt

For EACH JAR:
1 teaspoon dried dill
1/4 teaspoon chopped garlic (Iuse pre-chopped in a jar.)
1/8 teaspoon red pepper flakes OR 1 hot red pepper (optional )

Wash & drain okra. Trim any long stems.

Wash and sterilize jars, rings & seals in boiling water.

Mix brine ingredients and bring to a boil.

Remove one jar at a time and add the spices listed. Then pack the raw okra into the hot jar. Fill jar to 1/2” below the rim with brine. Move the jar around to release any trapped air while adding the brine. Cap the jar and hand-tighten the ring.

Add jars to a large pot and cover with water. Bring to a boil and continue to boil for 15 minutes. Remove from heat and allow to sit for 15 minutes before removing the jars from the water to a towel on a flat surface to cool. The jars should seal themselves as they cool.

Allow your okra pickles to sit on the shelf for at least 2 months to develop their flavor before eating. Best if refrigerated, and should be refrigerated after opening.

Chicken & Dumplings

What you’ll need:
Approx 4 quarts of water
4 teaspoons chicken flavored powder
1 stick butter
1 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder (optional)
2 10-count pkg. flour tortillas
1 pounds (or more) fresh chicken tenders

Sprinkle chicken with salt & pepper, place in baking dish, cover and bake 1 hour at 350. (You can do this ahead and add later.)

Mix seasonings, butter and water in a large pot and bring to a boil. Use a pizza cutter to slice tortillas into 1-inch strips. Add to liquid mixture. Return to a boil, then reduce heat and simmer gently for 30 minutes, stirring occasionally.

Using 2 forks, break cooked chicken into bite-sized pieces . Add the chicken and any juice that cooked from it into the liquid/dumplings mixture. Simmer 15 minutes or more. Enjoy!

Crusty Bread

I just love having crusty bread on hand! It’s yummy for so many situations! You can eat it with pasta, with spreads, with wine and a charcuterie board, or as cheese toast!

You can get a loaf (or 2 small loafs) of French bread for around $1 at most grocery stores that have a bakery.

Using a serrated knife, cut the bread into thin slices. Arrange on a baking sheet. Spray both sides with butter-flavored cooking spray.

Bake at 300 for 30 minutes, turning the slices over midway through. Cool and store in a large zipper bag. It’ll have the crunch of a crouton now but wont be browned. It keeps very well on the counter for a week or more in this state.

It’s good as-is, but I often pop a few pieces in the toaster oven on broil for just a couple minutes to brown for extra flavor. (It browns very quickly!)
