Due to the amount of protein, fat, minerals, and fatty acids per calorie, bison meat is a very nutrient-dense food. In comparison to most other meats, bison is lower in fat, cholesterol, and sodium; it is also higher in protein and iron! The lower fat content means you will have less shrinkage of the meat during cooking, meaning you get more meat out of what you pay for!
