Agave: 100% wild agave Salmiana aka Verde
Agave field: Venado
Cook: above-ground steam oven
Mill: double pass mill
Fermentation: open stainless steel
Yeast: wild
Water source: well
Distillation: alembic still
ABV: 45% (90 proof)

Tasting notes: wet earth and tropical notes. Spices like green peppercorn, mace charred plantain, to***co, nopal and mint. This mezcal is complex, flavorful, and delicate.
