One of the most common questions we get is, “What will this actually cost me?” So let’s break it down.
🐄 GRASS-FED/GRAIN-FINISHED BEEF
These cattle finish out larger due to the grain, averaging about 850 lbs hanging weight.
A quarter beef would be approximately 212.5 lbs hanging weight.
• Beef cost: 212.5 lbs × $4/lb = $850
• Processing: Approximately 212.5 lbs × $1.25/lb = $265
Total investment: About $1,115
Keep in mind that hanging weight is the weight of the carcass before cutting and packaging. Once processed, you’ll typically take home about 60% of the hanging weight, or roughly 130 lbs of packaged beef including steaks, roasts, and ground beef.
🐄 GRASS-FED/GRASS-FINISHED BEEF
These cattle finish smaller because they are leaner and raised solely on pasture and hay.
A quarter beef is approximately 167 lbs hanging weight.
• Beef cost: 167 lbs × $6/lb = $1,002
• Processing: Approximately 167 lbs × $1.25/lb = $208.75
Total investment: About $1,210.75
With an average yield of about 60%, you can expect to take home roughly 100 lbs of frozen, cryovac-packaged beef.
This is an investment, but there’s something special about filling your freezer with high-quality, locally raised beef and knowing exactly where it came from. It’s also a great way to save on premium cuts like steaks compared to buying them individually at the store.
One thing to keep in mind: when you purchase bulk beef, you’re getting a mix of cuts from the animal. We occasionally have people ask if they can get “only steaks,” but that’s not quite how it works. 😉
