1 cup (100g) graham cracker crumbs
3 tbsp (42g) unsalted butter, melted
8 oz (226g) cream cheese, softened
1/2 cup (60g) powdered sugar
1 tsp pure vanilla extract
1/4 tsp ground cinnamon
8 oz (226g) frozen whipped topping, thawed and divided
3/4 cup (95g) apples, peeled and finely diced, patted dry
1/2 cup (150g) caramel sauce, divided
Flaky sea salt, for topping

Divide and press a spoonful into the bottom of each serving cup to form a thin crust layer
Beat cream cheese, powdered sugar, vanilla, and cinnamon together until completely smooth

Tip: Patting the diced apples dry before folding them in keeps the filling from turning watery

No Bake Raspberry White Chocolate Cheesecake Cracker Bars

This is my favorite way to turn a handful of pantry crackers into an elegant no-oven dessert.

Ingredients:

24 buttery round crackers (like Ritz), crushed
6 tbsp (85g) unsalted butter, melted
16 oz (452g) cream cheese, softened
1/2 cup (60g) powdered sugar
1 tsp pure vanilla extract
1 cup (170g) white chocolate chips, melted and slightly cooled
1 1/2 cups (185g) fresh raspberries, divided
3 tbsp (60g) seedless raspberry jam, warmed

Directions:

Mix crushed crackers with melted butter until it resembles wet sand
Press firmly into a parchment-lined 8x8 inch (20x20cm) pan to form an even crust
Beat cream cheese and powdered sugar together until completely smooth
Mix in the melted white chocolate and vanilla until fully combined
Tip: Let the melted white chocolate cool slightly before mixing in, or it can seize against the cold cream cheese
Fold in half of the raspberries, gently, keeping some texture and swirls of color
Spread the mixture evenly over the crust and smooth the top with a spatula
Scatter the remaining raspberries over the top, then dollop and swirl the warmed raspberry jam through them
Refrigerate for at least 4 hours or until fully set, then lift out using the parchment overhang and slice into bars

This is my favorite fast treat when I want that cheesecake flavor without slicing a single bar.

Ingredients:

8 oz (226g) cream cheese, softened
1/4 cup (60g) powdered sugar
1 tsp pure vanilla extract
12 oz (340g) chocolate melting wafers or candy coating

Directions:
