Ingredients:
1 cup vegetable oil 🫒

1 3/4 cups granulated sugar 🍬

2 teaspoons cinnamon 🌀
1/2 teaspoon allspice 🌰
1 teaspoon baking soda 🥄
1/2 teaspoon baking powder 🧁
1 teaspoon salt 🧂
2 cups grated zucchini 🥒
1/2 cup granulated sugar 🍬
1 teaspoon cinnamon 🌀
Directions:
1️⃣ Preheat oven to 350°F and prepare loaf pans with oil and flour. 🍞🔥
2️⃣ Mix oil, eggs, sugar, and vanilla in a bowl. 🥚🍬
3️⃣ Combine flour, cinnamon, allspice, baking soda, baking powder, and salt in another bowl. 🍞🌀

- 2 eggs
- 1/4 cup almond milk
- 1 cup cooked quinoa
- 1 cup shredded zucchini
- 3/4 cup unsweetened applesauce
- 1 tsp. vanilla
- 6 oz. plain fat-free Greek yogurt
- 2 Tbsp honey
- 1 tsp. vanilla
- 1 tsp. lemon peel, as garnish
Directions:
1️⃣ Preheat your oven to 350°F.
2️⃣ Prepare the quinoa and set aside.
3️⃣ Combine dry ingredients in a bowl, set aside.
4️⃣ Mix eggs, almond milk, quinoa, zucchini, applesauce, and vanilla in another bowl.
