Ingredients:

• 15 slices soft white sandwich bread
• 4 hard-boiled eggs, finely chopped
• ⅓ cup mayonnaise
• 1 tsp Dijon mustard
• 10 cherry tomatoes
• 12 oz cream cheese, softened and divided
• ½ cup roasted red peppers, drained
• ½ tsp smoked paprika
• 6 baby corn pieces
• ⅓ cup basil pesto
• ½ cup finely shredded mozzarella
• 6 small sautéed mushroom slices
• 1 ripe avocado, mashed
• 1 tsp lemon juice
• 1 medium carrot, shaved into thin ribbons
• Fresh parsley, rosemary, chives and basil leaves
• Kosher salt and black pepper, to taste

Directions:

1. Cut two 2½-inch rounds from each bread slice. Arrange the bread rounds on a clean board and keep them covered so they stay soft.
2. For the egg canapés, mix the eggs with mayonnaise, mustard, salt and pepper. Pipe or spoon onto the bread, then finish with a cherry-tomato half and parsley.
3. For the roasted-pepper canapés, blend 4 ounces cream cheese with the roasted peppers, paprika, salt and pepper. Pipe onto the bread and garnish with baby corn, rosemary and parsley.
4. For the mushroom canapés, pipe a ring of pesto onto each bread round. Add shredded mozzarella, one sautéed mushroom slice and two chive batons.
5. For the stuffed-tomato canapés, mix the avocado with lemon juice, salt and pepper. Pipe a green ring onto the bread. Hollow several cherry tomatoes, fill them with softened cream cheese and place one in each ring with basil leaves.
6. For the carrot canapés, season the remaining cream cheese and pipe it into thick rosettes. Fold thin carrot ribbons into small fans and place one upright in each rosette.
7. Arrange all five varieties on a large platter and serve immediately, or cover and refrigerate for up to 2 hours.
