Shagbark hickory syrup offers a unique, smoky-sweet flavor and trace minerals from the tree's bark, though it functions primarily as a culinary sweetener rather than a potent medicine.

The extracted bark tea contains trace amounts of beneficial minerals like magnesium and potassium.Historical Uses: Native Americans historically used shagbark hickory bark teas and tonics to address general debility, joint discomfort, and rheumatism, though turning the extract into a 1:1 sugar syrup dilutes these medicinal properties into a standard sweet treat.

Foraged Elderberry and Rosehip Syrup.
It's delicious and good for you!

Combining rosehip with elderberry creates a powerhouse immune-boosting synergy that provides exceptional antioxidant defense, enhanced viral resistance, and respiratory support. While elderberry targets viral replication, rosehips deliver a massive dose of vitamin C to amplify the body's natural defense mechanisms

Vitamin C Absorption: Rosehips are one of the richest plant sources of natural vitamin C. Vitamin C works directly with the anthocyanins (deep purple pigments) in elderberry to enhance white blood cell production and improve overall cellular absorption.

Elderberry contains compounds that help block viruses from entering host cells. Meanwhile, the bioflavonoids in rosehips strengthen the structural integrity of cell walls, making it harder for pathogens to take hold.Enhanced Respiratory Support: Both herbs possess strong anti-inflammatory properties.

Together, they soothe swollen mucous membranes, dry up excess postnasal drip, and ease bronchial irritation during colds, flu, or seasonal allergy flare-ups.Deep Collagen and Tissue Repair: The massive antioxidant profile of this combination neutralizes free radicals generated during an infection.

This reduces systemic oxidative stress and helps accelerate tissue and joint recovery after periods of illness.Gentle Digestive Support: Rosehips add a mild, soothing demulcent and diuretic quality to the blend. This balances the astringency of elderberry, supporting gut health and encouraging the smooth elimination of metabolic waste.

Cherubed tomatoes canning
Zucchini bread canning
Green beans prepped and ready to go for canning

We've been fortunate that our garden has provided a bountiful amount of zucchini, cucumber, and green beans.

We have had a lot of luck foraging so far. We have a couple of elderberries that I was able to pluck, we have chanterelles about four bags in the freezer that's left, ( not to mention the ones that we're going to probably go and get this weekend ), and still have a ton of black cap raspberries that are waiting for me to process them in the freezer.

Chicken legs, last season's fruits and veggies that we still need to process that were frozen, and everything sitting on the counter has me a bit overwhelmed but luckily my good friend is going to be here to help me get through all of this hopefully maybe. Fingers crossed by this weekend.

As I was w**d wacking the lawn, the kids and I decided to make a lawn salad. All of this was hand plucked from the front yard of my home in California, Missouri, far enough from the road for me to feel comfortable with them eating it.

Creeping Charlie (Glechoma hederacea) Bold, minty, and slightly peppery with an earthy finish. High in Vitamin C and contains high levels of potassium and antioxidants (specifically rosmarinic acid, which is anti-inflammatory).

Spring Onion (Allium fistulosum) Pungent and crisp with a classic onion bite.

Common Chickw**d (Stellaria media) Fresh and light, very similar to a garden spinach or corn silk. It’s loaded with Vitamin C, Calcium, Magnesium, and Zinc.

Yellow Wood Sorrel (Oxalis stricta) Tart and bright, almost like a squeeze of fresh lemon juice. Incredibly high Vitamin C.

Henbit (Lamium amplexicaule) Mildly sweet and green, similar to kale but with a slightly peppery undertone. High in Vitamins A, C, and K. It’s also a great source of iron and fiber

White clover (Trifolium repens) Mild and sweet, reminiscent of young peas or raw green beans. High in protein (about 23-25%). It’s also rich in calcium and magnesium.

If I were to pick a larger quantity to make a real salad out of this, here's what I would do:

I would take the yellow wood sorrell (flowers and leaves) and blend them up a wee bit so they are a bit more liquid. This would be my " dressing"
The bulk would be my white clover flower head, henbit and chickw**d - flowers and leaves for all. It will be a gorgeous color too! To add some flavor, chop up the spring onion(including the white) and the flower and leaves of my creeping charlie. Drizzle that blended sorrel over it and
