While I was at the Dubuque Farmers' Market, I noticed a woman seated on the sidewalk behind me, quietly painting.

After the market was over, as she was packing up her watercolors I asked if she wouldn't mind showing me what she had been working on.

I was blown away!

It's not every day you get to be someone's subject.

She said she was drawn to all the colors on the stand.

She told me the carrots were the most challenging for her to paint because when she looked up from her painting for another look they were gone. 🥕

We love this Asian-inspired carrot salad when we're craving something a little different (and wanna clean out the leftover carrots hanging out in the bottom of the crisper drawer). ⁠

The base is simple: thinly sliced carrots with green onions and cilantro, dressed with lime, salt, chili crisp, ginger, honey, toasted sesame seeds, and a neutral oil, heated until hot.⁠

It's pretty easy, but your mandoline or julienne peeler is gonna be your friend here.⁠

Eat it fresh or prep ahead and put it over rice with your favorite protein for lunches.⁠

Every week, dedicated Dubuque Food Pantry volunteers swing by at the end of Dubuque Farmers' Market to help make it happen!🙌

Posing with our onions like men pose with fish 🐟

We had a ton of fun figuring out how to grow “overwintered” onions for the first time. We planted them in really late Sept. of 2025 in our high tunnel, a greenhouse-like structure.

While the high tunnel keeps them a little protected, the temps get pretty much as low as the outside at night (we don’t have heat). So they still gotta be tough to make it through our harsh winters. 💪

What are they like to eat though?! 🍳

They’re super versatile in the kitchen because they’re milder than mature bulb onions.

We recommend eating them a few ways
1️⃣ Cooked, just like you would with regular onions
2️⃣ In fresh contexts, like salads and salsas (because they’re milder than a cured onion
➕ Bonus: use the tops like green onions

So even if you don’t have a meal plan figured out yet… you really can’t go wrong!

Recipe ⬇️

Salad:

-1 bunch radishes, sliced
-Hanful of whatever herbs you have around, chopped

Dressing:

-½ cup extra virgin olive oil
- ⅓ cup red wine vinegar
-2 Tosp fresh lemon juice
-1 Tbsp dijon mustard
-1 Tosp pure maple syrup
- 1 tsp salt
-½ tsp black pepper

To emulsify: Add everything except the oil to a mason jar, pulse with an immersion blender, then add in the olive oil slowly.

To make the salad: Combine chopped veggies and herbs with a splash of the dressing. Taste and adjust. Let it marinate in your fridge for about 1 hour (or more).

**You'll have extra dressing. I use it for everything!

Like lettuce salads, greek salads, and marinating chicken for later in the week.
