I take a lot of pride in making everything from scratch, but even the best bakers have days where the kitchen wins. Today, the Missouri humidity totally deflated my Saturday eclairs. 🤫
But a good baker always has a backup plan.
Instead of eclairs, the universe gave us these gorgeous, crispy, caramelized Palmiers! I even made a raspberry version that is so good it'll make you forget the eclairs ever existed.
