🌾 Emmer is BACK! 🌾

After being sold out for over a year, our Emmer wheat berries are finally back and ready to make their way into your kitchens! 🙌

What are you making first with your fresh Emmer berries and stone-milled flour restock? Drop your recipe ideas in the comments! 👇

🌾 Curious why Emmer was sold out for SO long?

Great question! Here at Sandhill Mill, we grow all of our own grain, which means every harvest depends on Mother Nature right here in our corner of Minnesota. Some years, the weather is just right for growing wheat. Other years… not so much! 🌦️

Add in changing customer demand and Peter’s multi-year crop rotation plan (which helps us prioritize long-term soil health), and sometimes we end up with a longer-than-expected gap between harvests and a product shortage. 🫣

We do our best to plan ahead and keep your kitchens stocked, but farming doesn't always follow our plans!

We're continually adapting to the needs of our soil, the realities of each growing season, and, of course, YOU — our customers. ❤️

Thanks for your patience while you waited for Emmer to return. We're so excited to have it back in stock and back in your kitchens! 🌾

Wheat Harvest 2026 = Complete!

We now move on to the next steps - drying down the wheat, cleaning it, and getting it quality tested. Then we can do some test milling and baking in our kitchen and then on to YOUR kitchen. (We are especially excited for these last steps!)

Harvested grains:
🌾Soft White Wheat
🌾Soft Red Wheat
🌾Emmer Wheat
🌾Einkorn Wheat
🌾Hard Red Spring Wheat

Grains that did not make it to harvest:
🌾Spelt
🌾Sorghum

Sometimes the weather does not cooperate with us - be it too much or too little rain during certain times of the growing season or wind or hail - and certain fields or crops do not make it to the harvesting stage. This however does not deter us from trying "failed" varieties again. What varieties would you like to see in the coming years? Comment below!

We had a new photographer last week. He's either unaware of his thumb placement or strategically building suspense. 😄 Do you spy our recent farming adventures?

One of the questions we hear most is, **"How soon after harvest can I buy your wheat berries and stone-milled flour?"**

The answer isn't as simple as harvesting the grain and filling bags.

After harvest, each variety is cleaned by a USDA-certified grain cleaner. Their schedule plays a big role in our timeline. Once the wheat is cleaned, it's inspected and tested for protein, falling numbers, and purity to ensure it meets food-grade standards—and our own high expectations.

Then comes one of our favorite parts: we mill a sample and head to the kitchen for test baking. 🍞 🍪 Only after we're confident it performs beautifully do we package it for your home kitchen.

If all goes as planned, we're looking forward to having organically raised, Minnesota-grown SOFT WHITE winter wheat and fresh stone-milled PASTRY FLOUR ready in time for holiday baking.

Who's already dreaming about flaky pie crusts, tender cookies, and other Thanksgiving treats? 🥧 Let us know in the comments, and we'll be sure to notify you when it's available!

Your future flour is flowering! 🌷

Here's an update on our soft white winter wheat! (Video from May 31) 🌾

We captured one of the most important stages in the wheat's life cycle. Flowering only lasts about 3–5 days, but during that short window the wheat is pollinated and the kernels (or berries) begin to develop. We were thankful for ideal weather during this critical stage.

Fast forward to today, and that same field has transformed into beautiful golden "amber waves of grain." It's amazing how quickly the season changes!

Now the wheat just needs a few more weeks to finish ripening before it's time to fire up the combine for harvest. We can't wait to share that milestone with you.

Stay tuned—harvest is getting closer!

🍫 Happy World Chocolate Day! 🍫

We are celebrating by making a pan of our famous brownies. BUT each pan we make causes some dissonance in our home - are brownies to be enjoyed plain, with chocolate buttercream frosting, or with vanilla buttercream frosting? 👇 Comment below your preferred brownie topping.
