sting (not too fat and not too lean) beef for our customers. We have a license to sell USDA inspected packaged BEEF right out of our freezer (by the package/pound pricing)! OR you can buy it by the 1/4, 1/2 or whole cow (locker beef pricing). We are trying to produce a market sized beef steer that is finished between 1000 or 1200 pounds. This beef will have a hanging weight between 550 and 700 pounds. We help you order your locker beef by giving you tips and advice on your cuts and simply helping you anticipate the questions the butcher will ask. We use Sharp'sMeats in Hubbard Oregon. If we can claim these qualities, then why not say that our beef is organic or free ranging? The reasons are many. The simplest explanation is that we don't use the title of organic or free ranging because they must be certified and the certification is difficult and expensive to obtain. We fee that it is not necessary for a superior product, not would it be very sustainable or logical for a local, small beef farmer. We are simply trying to produce the best possible product, keep the costs down and that doesn't require a special label or certification. Healthy Pastures. Healthy Cows.
