A lot of misconceptions around Wagyu.

“More marbling must mean more saturated fat… right?

Professor Edward Webb has spent decades studying animal fats, and even he had assumptions about Wagyu before looking closely at the research.

What he found surprised him.

Wagyu showed a more favorable fatty-acid profile than he expected, helping explain why simply looking at the amount of marbling doesn’t tell the whole story.

That doesn’t mean unlimited steak. Throughout our conversation with Professor Webb and Tanya Pieterse of the World Wagyu Council , the message was clear: moderation and a balanced diet still matter.
