We rarely have to handle any of our Bison; however we interact with the herd quite often, so they are calm if we do have to work them. And they’re just cool to hang out with!

Wednesday is THAT day, you know, Hump Day! Halfway to the weekend and the mid-week slump. Why not liven up your Hump Day with some bison on your dinner plate?
Whether you are cooking steaks or burger or a roast, low and slow are the keys to success. Because bison is lean, it will cook more quickly so it is important not to overcook bison. Overcooked bison is tough bison. Cooking bison correctly is delicious and tender bison.

Elk have a short breeding season once a year in September and October. During rut, bulls fight for dominance and breading rights. To prevent injury and stress, we keep our big bulls separate with groups of females, but that can’t last forever. This video was taken as rut was coming to a close, and we were putting the animals back into one big herd for winter.
