One of the most classic dressings served in classic Wisconsin supper clubs, Hot Bacon Dressing combines some of the best of classic German flavors — pork, vinegar and sugar. Served with hearty greens such as spinach or romaine, this dressing is simple but packed with flavor and a nice zing from the vinegar.

Ingredients for Hot Bacon Dressing Recipe:
For the dressing –

Water: 1C
White Vinegar: 1C
Sugar: 1C
Bacon grease: 2Tbs

Instructions for Hot Bacon Dressing:
With the bacon ends, you may need to dice up the ends first, depending if you have cubes or slices. If slices, you can cook as is and crumble after cooking but the cubes, you will need to dice the bacon beforehand into small bits.
Once bacon prep is complete, if needed, either panfry the bacon ends or bits, or bake at 375 in a cake pan to contain grease.
If pan frying, once the bacon starts popping, stir frequently to keep bits from burning. Cook until bits are crispy and golden brown, about 25-30 minutes total, depending on if you have cut up bits, or sliced ends. Drain the bacon, but reserve the drippings! This is important.
If baking the bacon ends or bits, bake at 375 for 30-40 minutes, or until bacon is golden brown and crispy. Drain the bacon but reserve the drippings! This is important.
Once bacon is cooked and drained, add the water, vinegar and sugar to a sauce pan and bring to a boil. Boil for one minute to dissolve the sugar and mildly thicken sauce. Remove from heat.
To the pan, add as much bacon bits as you desire. In my opinion, the more the better. Add the bacon drippings now as well and mix to combine.

Serve this with hearty salads that do well with heat. Spinach, romaine, arugula bends etc.

Sunn h**p is such a favorite of ours on the farm. The cows love it and so does the soil. This nitrogen fixing plant is a natural fertilizer for the soil, leaving the pasture better after each season.

With its tall stalks, we can’t often see the cattle. When we see the yellow blossoms swaying, we know the herd is making their way through the pasture.
