• Multiple cold-held foods were stored above 41°F in prep and reach-in coolers. Food was discarded during the inspection. This was noted as a repeat violation. Residential refrigeration equipment was also being used and is not approved for food service operations. (9 points, repeat)

• Carnitas and queso were being hot held below 135°F and were discarded during the inspection. This was noted as a repeat violation. (9 points, repeat)

• Queso prepared the previous day was not cooled to 41°F within the required timeframe and was discarded. (9 points)

• Mold buildup was observed inside the ice machine at the bar. The machine must be cleaned and sanitized within 72 hours. (4 points)

• Chlorine sanitizer was not dispensing from the bar dish machine because a chemical line was disconnected. The issue was corrected during the inspection. (4 points)

• Chicken was cooling in a large covered container with pans stacked on top, preventing proper cooling. The chicken was moved for rapid cooling. (3 points)

• Drink cups were stacked while still wet instead of being allowed to air dry. This was noted as a repeat violation. (1 point, repeat)
