This is what happens when the sap tanks are full and no more room, so we are boiling tomorrow and inviting you to come see us. We are going to make some mini Dutch pancakes and have free samples. We use a wood pellet evaporator to make the syrup, this is a family event with our kids and grandkids. We laugh a lot and enjoy what is supposed to be spring..
Some of the first syrup should coming off the evaporator about 10 and hopefully done around 4. Stop out and try some, bourbon barrel aged, cinnamon, coffee, ginger, jalapeño and of course traditional maple syrups..

Sap run late March after a freeze up.

So this is what we do to get some of the best maple syrup. Again good morning from northern NY, 5:15 is when the sap Hauler arrived, the sap ran all night. Not the best run of the season, but the sugar content doubled from yesterday.
