Punkin Point Farm Punkin of the Week….

This week I finally had the chance to cook a peanut pumpkin. It has soared to one of my favorites!

The peanut pumpkin, also known as Galeux d’Eysines, is a unique heirloom squash from France with a distinctive pink-orange, warty skin that resembles peanuts. The bumps are caused by sugar crystallizing beneath the skin as the fruit matures, making the pumpkin naturally high in sugar. Its sweet, velvety flesh is excellent for cooking, particularly for soups, stews, and pies.

When cooked, the peanut pumpkin has a smooth, creamy texture and a sweet flavor that resembles sweet potato and apple. Its bright deep orange color does not disappoint. It was easy to roast and separate from the skin once cooled. It was delicious tasting roasted. It would be great to eat as a stand alone side dish. I made pie, pumpkin bread, and pumpkin bars.

The pumpkin pie connoisseur in the family said it was the best pie they’d ever eaten. She would know as she ate it for breakfast, lunch, and dinner. You won’t be able to get enough of the peanut pumpkin! Yummy!!

Punkin Point farm Punkin of the week…..Silver Edged pumpkin is an heirloom squash variety. It is an important ingredient in Latin American cuisine. Seeds are often roasted and eaten as a snack, known as pepitas. The seeds are ground and used to make pipian sauce, which is a type of mole, and is served over chicken or enchiladas. The sauce is green and has a nutty flavor. The white and silver edge of the seed is actually an outer hull or husk. Inside the hull is a long green seed. This is what is grounds to make pipain sauce.
The seeds of Silver Edged Squash are high in protein, essential fatty acids, vitamin B-complex and vitamin E, copper, manganese, potassium, calcium, iron, magnesium, zinc and selenium.

Pumpkin Point Farm….Bonus pumpkin of the week🧙‍♀️🎃. We have customers whose creativity defies gravity turning a Marina Di Chioggia into Elphaba.
The Marina a green heirloom Italian variety is wicked good to eat! It is a sweet, dry, dense pumpkin ideal for savory dishes like gnocchi and risotto. It can also be used in your favorite pumpkin desserts. Highlight the pumpkin’s natural flavor as the Venetian street vendors do by simply grilling the Marina. Cut the pumpkin into wedges. Brush the wedges with olive oil. Grill until tender. Sprinkle with salt before serving.
Try the Marina in your favorite pumpkin recipes. It’s magical! Every pumpkin “deserves the chance to fly.”

Pumpkin of the week….. The Dragonfly

New 2025 variety. Beautiful with deep orange and green coloring making a great addition to your autumn displays. As it is so new, little was known about the flavor profile. Grateful for a customer’s feedback who was excited to experiment. They gave the Dragonfly high ,arks stating its versatility in both savory and sweet dishes. They ate is as a roasted side dish, in pumpkin and bean quesadillas, and pumpkin soup. A flavor profile similar to sweet potatoes. It is a hard shelled pumpkin variety so easier to roast than peel. It roasts well becoming tender and easy to purée without a lot of excess water. The Dragonfly is destined to become a new favorite! Delicious!! 😋

Product of the week…Green-Striped Cushaw: This green and white squash of the South is also known as the Tennessee sweet potato squash and valued as an all-around squash for desserts or vegetable dishes. Native Americans have grown this squash since prehistoric times – possibly as far back as 7000 BC. I was introduced to it thirty years ago when we first started selling pumpkins. Several customers claimed it was the best pumpkin for their pies. It will be much paler in color than your traditional pumpkin pie.
The Cushaw’s primary flavor notes are a delicate sweetness and a subtle nutty undertone. It readily absorbs other flavors from accompanying spices and ingredients, making it great for both sweet and savory dishes.
Popular for baking pies, muffins, and other desserts due to its sweetness and moisture-retaining qualities. Excellent in soups, stews, and as a side dish. Roast to enhance its natural sweetness. Its thick texture and sweet flavor make it suitable for jams, jellies, and cushaw butter. Can be used to make applesauce-like breakfast dishes, sauces, and moles.
Roast chunks on an oiled sheet pan with a sprinkle of salt. Set oven to 425° F degrees for a deep caramelization – turn a few times while cooking and season with salt on every turn. After caramelization, reduce oven to 325° F degrees and continue to roast until tender. For savory dishes, add a sprinkle of brown sugar, sage, and/ or thyme in the last ten minutes of cooking. Make a whipped side dish; mash with butter, pumpkin spices, cream, or favorite milk.
This squash freezes well, and the fresh-cut cubes won’t stick together, so no need for individual freezing of chunks before freezer packing. Yummy!!!🎃
