Chef Easy

This is very similar to what Chef Easy was going to be doing. Not exactly the same, but similar. I've tried it and it was good, not perfect, but good. I'd recommend if you're not concerned about organic but want some easy to prepare fresh meals.

The barbecue sauce makes this meatloaf a little sweeter than you're used to, but twice as delicious. When paired with potatoes and Brussels sprouts, this dish is packed with delicious flavor!

Key Lime Pie
• 1 Recipe GF Graham Cracker Crust (store-bought variety)
• 2 12.3 ounce boxes extra firm silk tofu, drained (organic best)
• 1/4 cup fresh key lime juice (key west bottled works well too)
• 1 T. lime zest (optional)
• 3/4 cup organic white granulated sugar (Xylitol for a diabetic friendly and still delicious version)
• 1/4 t. salt
• 1 T. cornstarch (or waxy rice starch)
Preparation:
1. If mot usine a store crust, prepare the Graham Cracker Crust baking the crust in a 9" pie plate. Allow the crust to cool completely.
2. In a blender, combine the tofu, lime juice, zest (if using), sugar, salt and cornstarch. Process for several minutes, or until smooth and thick.
3. Pour into the prepared pie crust and place in the freezer for 2 hours, or until firm.
4. Serve from the freezer, garnishing with whipped cream and/or lime wedges if desired.
