Northwest Chocolate Festival was a lot of work, a little chaos, and a whole lot of learning.

But the best part? Meeting so many people who share our curiosity for cacao, introducing new flavors from Peru, and seeing your reactions to everything we’ve been working on.

The factory matters, but it can’t undo everything that happened before the beans arrived. The decisions made at origin, from what gets harvested to how cacao is fermented, dried and handled along the way, all shape what eventually ends up in your hands.
