Do not fear, that car week is here. Most of us locals know the dread all too well. Some schedule vacations a year in advance or leave town on the spot to avoid the madness. For those who can’t, we are here with you.

Pacific Rim - WC IPA - 7.0% abv

California is known for its coastal sunsets, world-class wines, and West Coast IPAs. This beer style has become a long-time staple within the Golden State.

WC IPAs are traditionally brewed using hops from the Pacific Northwest, showcasing flavors and aromas of citrus, pine, and stone fruit. Modern iterations make use of newer hop varieties exhibiting fun new hop characteristics.

To us, a WC IPA is light in color, bright in hop flavor, and finishes crisp in parallel with a lingering bitterness. The malt flavor takes a backseat in this style to really let the hops shine.

We brewed Pacific Rim to be the best of both worlds. Showcasing one of our New Zealand favorites, Nelson Sauvin. An exceptionally unique hop variety with cool climate white wine characteristics of Sauvignon Blanc, fresh gooseberry, and strong tropical fruits like passion fruit and guava.

Our first take on this recipe used hops from PNW and NZ as we wanted to pay homage to the traditional style. However, our first batch didn’t hit the mark as expected. So we got back to the drawing board and decided to hit it hard with Nelson throughout the boil for bitterness and flavor, whirlpool for flavor and aroma, and double dry hopped it in our fermenter for a rich aroma and hop oily mouthfeel.

Not a well-budgeted beer by any means, but we are thrilled with this iteration 🍺

Last month, we had our first public appearance outside the taproom pouring at the Monterey Beer Festival. We were stoked with the response, and thrilled to see many from the event visit our nano brewery in Carmel.

“Ube Doobleh” was our hit beer for the event. An 8% hazy double IPA brewed with a boat load of fresh baked Ube. As an experimental ale it was great to see so many enjoy it.

Even after the beer fest, a lot of folks have been asking about the ‘Ube Beer.’ So we want to let everyone know that a new iteration is underway.
