The broth alone is worth the bread — white wine, saffron, and shallots reduced just enough to carry the brine of the mussels without overwhelming it. We served these in the courtyard as the light dropped, the shells still steaming against the evening air.

The crust on a diver scallop, when the heat is right, is something close to perfect — thin, golden, giving way to a center that's barely set. Wild mushrooms underneath, then a brown butter drawn sweet with golden raisins and sharpened with capers.
