Frog Balls (Pickled Brussels Sprouts)
🛒 Ingredients:
• 2 lbs Brussels sprouts
• 2 1/2 cups white vinegar
• 2 cups water
• 2 tbsp pickling salt
• 1 tbsp sugar
• 4 garlic cloves, peeled
• 1 tsp dill seeds
• 1 tsp red pepper flakes
👩🍳 Directions:
1️⃣ Prepare the Brussels Sprouts: Trim the Brussels sprouts and remove any loose outer leaves.
2️⃣ Blanch the Brussels Sprouts: Bring a large pot of water to a boil. Add the Brussels sprouts and blanch for 3–4 minutes. Drain thoroughly.
3️⃣ Pack the Jars: Carefully pack the blanched sprouts into clean jars along with the garlic, dill seeds, and red pepper flakes.
4️⃣ Make the Brine: In a saucepan, combine the white vinegar, water, pickling salt, and sugar. Bring to a boil, then reduce to a gentle simmer for 5 minutes.
5️⃣ Fill the Jars: Pour the hot brine over the sprouts, ensuring to leave about 1/2 inch of headspace.
6️⃣ Seal and Cool: Seal the jars and allow them to cool completely. Refrigerate before serving.
Storage Information

• Best flavor develops after 48–72 hours.
• Retains quality for up to 3–4 weeks.
• Always ensure that the sprouts are fully submerged in the brine.

• This recipe is ideally suited for refrigerator pickling.
• If choosing to can using a water-bath, adhere to approved acidified-vegetable guidelines precisely and process according to your altitude.
• Discard immediately if jars exhibit bulging lids, leaks, mold, or any off odors.
