Relish Catering is now the Main Catering Vendor and Preferred Vendor at Sycamore Bend Estate in Wilmington, NC.

Twelve acres of pasture and live oaks, an 1818 manor house, horses just past the ceremony lawn, and covered space behind the barn for up to 125 guests. Sycamore Bend brings the setting. We bring the food.

Part three, and the zucchini bacon is almost there.

Fresh slices on one end, midpoint getting flipped, and finished pieces at the other end of the line.

Once they hit that finished stage, we move them to a sheet pan with a screen, sprinkle with salt, and let them rest so the dehydration keeps working.

That resting step is where the crunch really locks in.

Part two of our zucchini bacon from Trask Farms.

Working the heat from medium down to low, so the slices dehydrate slowly and get that crispy texture instead of just cooking through.

Starting with a fresh batch, pulling out the natural moisture first.

Then the marinade goes on, soaking in that smoky, bacony flavor as it crisps up.

Zucchini and squash, sliced paper thin on the mandoline.

Dusted with smoked paprika and fresh cracked black pepper.

Marinated in soy sauce, liquid smoke, garlic, onion, maple syrup, and apple cider vinegar.

Anybody else buying tomatoes at the farmers market and tossing the ends and pieces? Stop doing that. Save them until you’ve collected about 2 lbs, and you’re twenty minutes away from the best condiment on your table.

Tomato Jam Recipe

• 2 lbs tomato scraps
• 1 pint apple cider vinegar
• Roasted garlic, to taste
• ½ cup brown sugar
• 1 tbsp salt

Combine everything in a pot and simmer on medium heat for 30-40 minutes, stirring occasionally, until thick and jammy. Optional: a pinch of cinnamon for warmth. Spread it on a cheese board, a sandwich, anything.
