Chestnut mushrooms are such a treat—they’ve got that gorgeous bronze color, a mild earthy flavor, and a little nutty crunch when cooked just right.

We love sautéing them until the edges get crisp and golden, then tossing them into pastas, grain bowls, or piling them high on toast.

They hold their shape beautifully in soups and stir-fries too, adding both texture and flavor. Every time I see a fresh flush of chestnuts, I can already picture the delicious dishes they’re destined for.

Pink oyster mushrooms are a showstopper.

Their ruffled edges and bright bubblegum color make them one of the prettiest varieties we grow—like a bouquet of mushrooms instead of flowers.

King Blue Oysters are a chef’s dream. Thick stems, meaty texture, and those deep blue caps that hold their shape beautifully when seared or roasted.

They’ve got a mild, earthy flavor that works in everything from pasta to bao buns, and they plate like a masterpiece.

These mushrooms grow slower than other oysters, which gives them that dense, satisfying bite.

One of the joys of living and breathing mushrooms every day is spotting them where you least expect.

Enoki mushrooms are one of our absolute favorites to grow—they’re delicate, crunchy, and so pretty with their long, slender stems and tiny white caps.

They’ve got a mild, slightly fruity flavor that makes them super versatile in all kinds of dishes. I love tossing them into ramen, stir-fries, or even spring rolls for a fresh little crunch.

When you cook them, they hold their texture beautifully and soak up flavor like a sponge.

Enokis are also packed with fiber, B vitamins, and powerful antioxidants that support your immune system and overall health. They’ve even been studied for their anti-inflammatory and anti-cancer properties.
