Think your ribs are “good enough”? They might be one small tweak away from fall-off-the-bone amazing.
Here are 3 mistakes that could be ruining your ribs:
1. Cooking too hot, too fast
Ribs aren’t burgers. They need low and slow heat so the fat can render and the meat gets tender. If your grill is blazing hot, you’ll end up with tough, chewy ribs. Keep the heat steady and give them time.
2. Skipping the seasoning layer
A quick sprinkle of salt isn’t enough. Ribs need a good, even coat of dry rub to build flavor and that beautiful crust. Let the rub sit for at least 30 minutes (longer if you can) before they hit the grill. It makes a huge difference.
3. Drowning them in sauce too early
Sauce is packed with sugar, which can burn fast. Wait until the last 15–20 minutes of cooking to brush it on. That way you get sticky, caramelized goodness instead of blackened edges.
Great ribs don’t require a trophy or a smoker the size of a truck. Just a little patience, solid seasoning, and the right timing.
