That delicious golden cheesy crust, that perfectly seared steak, that lovely browned meringue, even that beautiful crust on your baguette... Yup, all thanks to the Maillard Reaction.

Delicious, bubbling, ooey, gooey, caramelized sugar syrup is the basis of much of what we do; it produces wonderful aromas and is an intoxicating sight to see!

Did you know that the browning of sugar is caused by the breakdown of its carbohydrates in a process known as the Maillard Reaction? Its the same process thats responsible for breaking down carbohydrates and proteins in meats, which is why you get that delectable 'brown crust' on a perfectly grilled or roasted piece of meat!

Making candy is about more than just ingredients, you've got to study chemistry amd physics too!
