For those of you who do not know of Saffron the Highland Cow...
She was born in Ossipee, NH, very unexpectedly at the Life of Riley Farm. It was the Summer of 2013. We were grazing some cows there when I got a phone call from Dan Riley that there was a surprise birth and a very fuzzy calf hiding in the woods. It took a while, but we finally found her and with a bit of help managed to get her and Momma into a trailer and bring them back to our farm in Wolfeboro and she has been with us ever since.

I haven't posted to this page in almost a year. My dreams of raising Highland Cows didn't quite work out. However, I do have Saffron born last year and now Angelica, who is half Jersey and half Highlander. Someday, I just may end up with that herd (fold) of Highlanders that I had hoped for.
