Whipped Gorgonzola stacks are having a moment. You may have seen this trend all over social media - so I decided to try it. I can now say I get it. Creamy, tangy, Gorgonzola whipped with a bit of milk then stack with a layer of caramelized figs, a drizzle of honey - mmmmmmm, I can't even begin to tell you how yummy this was. A little messy to make, but so very worth it! And what an impression - try this appetizer at your next dinner party or get together and impress your guests - then watch it disappear in seconds. For stacking you'll need a small biscuit cutter.
1/3 lb. Gorgonzola (or your fav. creamy blue)
1 Tbsp whole milk / cream / half-half
3-4 Tbsp - cream cheese or Mascarpone (I used mascarpone)
3 Fresh figs - 1 cut into bite size pieces
Honey
With a small whisk or fork, whip the Gorgonzola with the Milk until smooth and creamy. set aside.
Cut 1-2 fig into small bite size pieces mix with a drizzle of honey.
Center a small biscuit cutter or ring mold in the center of the plate and fill it with a layer of the Gorgonzola mixture. Follow with a layer of chopped figs.
Top with a layer of mascarpone cheese then another layer of whipped Gorgonzola.
Refrigerate for 1 hour.
Unmold and garnish with fresh figs, a drizzle of honey or nuts or whatever your heart desires.
