This coming up Thursday, we will be hosting an all day fundraiser for one of our very own. As most of you know, Justin had to go to the hospital a couple of weeks ago. While he has finally been able to come home, he is still not able to return to work fully. 20% of sales for the whole day of the 16th will be donated to Justin while he still recovers. Looking for an easy and delicious new fall recipe?

Try Stuffed Spaghetti Squash!

1 Sommer Farms Spaghetti squash
1 jar Sommer Farms spaghetti sauce
1 lb Italian sausage
1 cup mozzarella cheese

Cut squash in half and scrape out the core and seeds. Lightly brush the inside with some olive oil and season with salt and pepper. Bake in a glass casserole dish at 400° for about 35-45 minutes (depending on size).
While baking, brown Italian sausage, drain fat. Add 1 jar Sommer Farms spaghetti sauce and heat until simmering.
Once squash is tender, use a fork to scrape the inside. Spoon sauce/sausage mixture over the two squash halves and top with cheese. Bake another 20 min until cheese is melted.
Enjoy!!
