Fresh Milled Flour Banana Chocolate Chip Muffins 🍫🍌
These banana chocolate chip muffins are soft, fluffy, and packed with sweet banana flavor and melty chocolate chips in every bite. This recipe works beautifully with freshly milled flour for a rich, homemade taste and more natural grain flavor, but you can also easily make them with all-purpose flour if that’s what you have on hand.
Either way, they bake up cozy, moist, and perfect for breakfast, lunchboxes, or an afternoon coffee break! 🤍
Ingredients:
2 ripe bananas, mashed (220g)
⅓ cup melted butter (75g)
½ cup granulated sugar (100g)
¼ cup brown sugar (50g)
2 large eggs, room temperature
½ cup buttermilk (120g)
1½ tsp vanilla (7g)
180g fresh milled flour (or 1½ cups / 180g all-purpose flour)
1 tsp baking soda (5g)
1 tsp baking powder (4g)
½ tsp salt (3g)
½ tsp cinnamon
Mini chocolate chips — measure with your heart 🤍 (I used ⅓ cup)
Dark chocolate chunks for the tops of the muffins
Instructions:
Preheat oven to 425°F (218°C) and line a muffin pan.
Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a bowl until evenly combined.
In a separate bowl, whisk the mashed bananas and melted butter until smooth. Add both sugars and mix until glossy. Whisk in the eggs, buttermilk, and vanilla until fully combined.
Fold the dry ingredients into the wet ingredients until just combined, with a few flour streaks remaining. Fold in the chocolate chips — do NOT overmix!
Let the batter rest for 15 minutes for taller muffin tops. ⬆️
Fill the muffin liners almost to the top and sprinkle with extra chocolate chips or chocolate chunks.
Bake for 5 minutes at 425°F, then reduce the temperature to 350°F (175°C) and bake another 13–15 minutes, or until a toothpick comes out with just a few moist crumbs.
