In this recipe will learn how to make perfect gujiya recipe or karanji recipe as we say in Marathi..trips and tricks for a perfect karanji / gujiya recipe.
Gujiya is a sweet fried dumpling which is filled with a mixture (mawa/khoya) coconut and nuts.
These mawa gujiya are the perfect festive treat, the addition of coconut makes them so special!
This is my mother’s favourite recipe and is a must in my family during diwali season or ganesh chaturthi. perhaps,
i must have learnt this recipe from her long back. she even prepares several variations to this recipe.

SERVINGS:7-8 piece
INGREDIENTS
for stuffing:
½ cup dry coconut / kopra / desiccated coconut
½ tsp batter/ghee
1 cup Mava
½ cup sugar
5 cashews and almonds (chopped)
¼ tsp cardamom powder
for dough:
2 cup maida / all-purpose flour / plain flour
¼ tsp salt or to taste
½ tsp oil
food coloring (optional)
yellow color
orange color
green color
red colore
INSTRUCTIONS
karanji dough recipe:
firstly, in a large mixing bowl take maida and salt to taste also oil.
now rub and crumble the dough well between your hands.
furthermore, add water and knead the dough.
further, cover with a moist cloth and rest for 30 minutes.
stuffing recipe:
firstly, in a pan take dry coconut. Roast for 1-2 mints n transfer in boal
further add Mava and sugar.
further add chopped dry fruits.
then add cardamom powder and mix well.
finally, the stuffing is ready to prepare karanji. keep aside.
Recipe:
now pinch a small ball sized dough and sprinkle some flour roll it to a ball.
further, roll to a slightly thick puris and cut to a round shape.
also grease with warm milk to the edges of the puri.
now place a tsp of the prepared coconut stuffing in the middle of the puri.
now stick the edges together and press slightly.Now add some water on the edge n press slightly
furthemore, press the edge gently and fold it inside.
now take the fork and press the edges, Repeat the same process for all.
food coloring (optional)
Mix color with some oil and mix well and add gently
choose your favorite color and do it all
furthermore, deep fry the karanjis till they turn golden brown.
finally, drain over the kitchen towel and serve.
