Join us at the Briar Chapel Farmers Market this Friday from 4-6PM!

Stop by Mystic Meadows Farm for fresh, locally raised beef and farm-fresh eggs. Stock up for the weekend, meet your local farmers, and enjoy the best of what our community has to offer.

Try this for even better burgers:
Press your thumb or the back of a spoon into the center of your patties to make them thinner in the middle. This ensures they stay flat and cook evenly.

We look forward to seeing you Friday!

Batched Cucumber, Lime and Honey Margaritas
There’s no need to peel the cucumber before juicing. Carafes of margaritas can be made ahead of time and kept in the fridge. Hold off adding the ice until you’re about to serve.
TOTAL TIME: 20 minutes
MAKES: 1 (32-ounce) carafe or pitcher, or 8 (4-ounce) margaritas
Ingredients
For the honey syrup:
• 1 cup water
• ½ cup honey
For the cucumber-mint-lime juice:
• 1 large cucumber, washed and roughly chopped
• ¼ cup fresh mint leaves
• ½ cup fresh lime juice (from 4 limes)
• Flaky salt for rims of glasses
• 2 cups (16 ounces) tequila, chilled
• 1 cup (8 ounces) Cointreau, chilled
Directions
1. Make the honey syrup: In a small saucepan over low heat, combine water and honey, and simmer until combined. Set aside to cool.
2. Make the cucumber-mint-lime juice: Use a juicer or blender to process cucumber with mint. Add a little water if needed to help blend. Strain juice through a fine-mesh strainer. Discard pulp. Add lime juice. Store in an airtight container in refrigerator. Use within 24 hours.
3. Salt 8 lowball glasses: Fill a saucer with flaky salt. Rub a lime wedge around edge of each glass, then dip into salt. Set aside.
4. To serve, add a large handful of ice to a carafe or pitcher. Pour in tequila, Cointreau, cucumber-mint-lime juice and ¼ cup honey syrup, and stir to combine. Pour into prepared glasses.

Irish Bakers

My first try at baking was learning how to make Irish bread! Irish bread wasn’t just for St. Patrick’s Day in my house. We celebrated holidays and special occasions with lots of love, laughter and a big slice of Irish bread!

As someone who needs to follow a gluten free diet, I understand the challenges of finding tasty treats. I began creating gluten free pastries and breads after attending gluten free baking courses at the Culinary Institute of America in New York.

Strict guidelines are practiced when preparing our gluten free desserts using separate equipment and baking pans.

I’m a resident of Briar Chapel and always look forward to seeing my neighbors at the market!

This week our gluten free Mini Peach Bundt cake returns. Stop by for a sample!
