I know you saw these Thai chicken patties on a story a couple weeks ago and I’m sorry it’s taking me so long to post them.

I have to tell you, these turned out even better than I hoped.

The day I made these Thai Peanut Chicken Patties, my mom happened to stop by Labor Day right around dinnertime. Since she’s been trying to eat more protein lately, I told her to stay and have dinner with me. She absolutely loved them, and honestly, I think the peanut soy glaze is what really put them over the top.

I served them with a simple deconstructed spring roll salad and drizzled that delicious glaze over everything. It was one of those meals that felt fresh, filling, and just perfect for a summer evening.

One thing I love about this recipe is that it makes a nice big batch. I usually form all of the patties, then freeze half of them raw on a parchment-lined plate or baking sheet until they’re solid. After that, I transfer them to a freezer bag so I have an easy homemade dinner ready to go another night. Just thaw them overnight in the refrigerator before cooking.

If you’re looking for something different to do with ground chicken, give these a try. You can grill them, cook them in a skillet, or even bake them. They’re just as good served on their own with a salad as they are tucked into a toasted bun or warm pita loaded with crunchy veggies.
