We wrapped up the baking and pastry section with custards, plated desserts, and frozen desserts.

Students worked through techniques that required patience, precision, temperature control, and timing - from delicate custards to pastry production and frozen applications.

A lot of detail work in this section, but also a lot of creativity.

Strong finish to a unit that challenged students in a completely different way than the savory side of the kitchen.

Cake production pushed students to bring multiple skills together at once.

Students practiced mixing methods, fillings, buttercreams, icing techniques, layering, piping, and overall presentation. The goal wasn’t perfection - it was learning control, structure, and consistency.

There’s a big difference between making a cake at home and producing one in a professional kitchen environment. This group kept improving with every round.

One of the most rewarding parts of the evening at our annual dinner was how our community gathered around the table to support these students.

With J.Q. Dickinson Salt-Works providing the perfect setting it was easy to see how food has a way of creating connection, conversation, and memory — and this dinner was full of all three.

Tonight was one of those full-circle moments as an instructor.

I had the opportunity to visit and enjoy this weekend’s featured dessert created by former Carver Culinary Arts student, .pres . Her pavlova with chiffon cake, strawberry diplomat cream, and strawberry coulis was beautifully executed: balanced, thoughtful, and technically refined.

What made it even more impactful was how much it reminded me of my childhood and the strawberry festivals I grew up attending each year. The flavors carried that familiar strawberry shortcake feeling that instantly brings back memories of community traditions and summers in West Virginia.

As an educator, moments like this are incredibly rewarding. Watching former students develop their own culinary identity and contribute creatively to our local food scene is exactly why programs like ours matter.

The details matter!

One thing I try to teach students early on:

The difference between a good event and a great one usually lives in the details.

The extra towel.
The backup plan.
The perfect spoon for plating.
The final wipe of the plate before service.

This dinner challenged our students to think beyond cooking and into professionalism, preparation, and ex*****on.

What a night.

Our annual student chef dinner at J.Q. Dickinson Salt-Works was a tremendous success, and I could not be more proud of my students.

From the first planning meeting to the final plate leaving the pass, this dinner represented months of growth, teamwork, creativity, and hard work. Every course told a story rooted in Appalachian tradition, personal experience, and a passion for hospitality.

Thank you to everyone who joined us, supported my students, and helped make this evening so meaningful. I love when my community shows up for my students and without you all this event wouldn’t be as impactful.

Special thanks to Rafael Barker / Rafael Barker Photography for beautifully capturing this unforgettable evening. Your skills and professionalism go unmatched.

🍪Cookies & Pies 🥧

This section was all about consistency, technique, and attention to detail.

Students worked through a variety of cookies and pies while focusing on dough preparation, mixing methods, blind baking, fillings, texture, and presentation.

Some recipes looked simple on paper but quickly reminded everyone that baking is all about precision.

A strong reminder that pastry work is both science and craft.
