There’s not many on the carcass. It’s prized for its marbling and texture.

The Denver Steak. (This is a butterflied Denver that we just fabricated from the Chuck shoulder.) It’s rare to find these at your supermarket or grocer. Most of the time, this primal muscle is cut into Chuck roasts.

Smoked Flat Iron.....

Have you ever??? This is the BEST alternative to BRISKET (which is too damn expensive).

To smoke a whole flat iron, what you are looking for is the "Top Blade Roast". Each weighs maybe 6 lbs and the only trimming you need to do is some silver skin on one side.

Versus the brisket which you lose over 30% in trimming and you yield about 1/3 of its beginning weight, the Top Blade Roast will yield you about 80-90% of its beginning weight.

This cut is my new personal favorite to smoke...... trust me, it you enjoy smoking meat this will be your new favorite too.
