I often find myself getting frustrated by the things I haven’t quiet mastered in my craft. When a recipe bombs or a technique fails, I have to remember that this is the very method through which we learn and become masters of our craft. Edison, when asked about his many failed attempts at the lightbulb, wisely said “I have not failed, I’ve just found 10,000 ways that won’t work.” What an incredible perspective!

I know it seems bizarre, but it’s true. My stopwatch is constantly running and I’m always jotting down my times. Why? Because time is my most precious commodity and as such, I need to know how much time any given cookie task takes so I can determine boundaries and plans for the days and weeks ahead.
