The “I can’t handle any spice” Baek Kimchi (White Kimchi)

Yes, yes, a lot of Korean food typically includes red pepper flakes and has some level of spiciness. Just because you can’t handle a single red pepper flake in your meal doesn’t mean you can’t try kimchi. Baek Kimchi, or non-spicy white kimchi, is a refreshing and mild kimchi, typically made from chestnuts, jujubes, pine nuts, and a range of vegetables and fruits. While there’s no spice, there’s still a ton of great flavor.

The green onions used for pa-kimchi in Korea are thin and long and usually sold in huge bunches. After mixing with kimchi paste, I sometimes made a bundle with a few green onions and stacked them up in my kimchi container. So when I served them, I just took out one bundle and put it on a plate or bowl. But when I was busy, I used to store all the tangled green onion kimchi together in an airtight container. Pa-kimchi is a big deal in Korea and we eat it all the time. South Jeolla province, where I am from, is well known for its spicy and pungent green onion kimchi.

The “Fat OG” Chonggak Kimchi (Ponytail Radish Kimchi)

As you may have guessed from the nickname, this style of kimchi is very similar to the previous two, with the main difference being the main ingredient, which is a radish with a “ponytail” of greens at the end. Unlike Kkakdugi, which is chopped into squares, Chonggak is typically served uncut, however uses a very similar combination of spices and other ingredients as the other two.

Baechu Kimchi (White Kimchi) or also known as Napa cabbage kimchi is the most popular type of Kimchi amongst all the other types. That is why when you talk about Kimchi, it always refers to Beachu Kimchi. Also, this type of Kimchi is used as the main ingredient in another delicious Korean dish which is the Kimchi Hot Pot. During the hot months of summer, other types of kimchi are often swapped for the cooling oi sobagi or cucumber kimchi (via San Antonio Current).
