These tarts not only taste great but they are extremely healthy for you. My current line's ingredients help lower cholesterol, is great for diabetics as it does not spike your blood sugar levels and a specific line I produce for diabetics uses a sweetener that does not affect blood sugar levels at all. The main ingredient coconut butter is also an anti fungal anti bacterial which helps tremendously with problems with yeast and immune function.

Diane Hughes a Charlotte photographer and fine artist has always had a passion for eating healthy. Her dad grew up on a farm and Diane's passion led her to work in several food coops in westchester county. Her Fine art also focuses on raw , organic materials. Her passion for eating Raw began several years ago when she discovered a raw food restaurant in NYC. The food was out of this world, bursting with flavor and filled with vitamins, minerals and enzymes. Recently Diane discovered a need for healthy desserts. A retired friend in her neighborhood was addicted to sugar and sweets. Diane tried to help her cut down but her desire did not go away. After trying one of Diane's lemon tarts she was hooked. Not only did she love the taste but it was filled with vitamins and minerals and a type of sweetener that did not affect her blood sugar levels. Diane wants to inspire people with sugar issues, diabetes, weight issues and other health related issues to know that eating healthy does not mean you have to give up taste or satisfaction.
