Our house-made beef bacon gets a coffee rub for a little extra depth of flavor, and we think it’s pretty darn good. If you haven’t tried it yet, swing by the shop and pick some up for your next bite!

Yesterday we celebrated 15 years of Chop Shop… so today we’re taking a walk down memory lane. 🥩

From the early days in Asheville to 15 years of doing what we love, a lot has changed, but the important stuff hasn’t. Good meat, good people, local farmers and producers we’re proud to work with, and a community that has supported us every step of the way.

Here’s to 15 years of good neighbors and local meats.
