🥧 **Ingredients**
**For the Buttery Shortbread Crust:**
- 2 cups all-purpose flour
- ½ cup powdered sugar
- 1 cup unsalted butter, softened
- ¼ tsp salt
- 1 tsp vanilla extract
**For the Gooey Pecan Filling:**
- 3 large eggs
- 1 cup light corn syrup
- ¾ cup packed light brown sugar
- ¼ cup unsalted butter, melted and cooled slightly
- 2 cups chopped pecans
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp ground cinnamon, optional
👩🍳 **Directions**
1. Preheat your oven to 350°F (175°C). Line a 9 × 13-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a large mixing bowl, combine the flour, powdered sugar, softened butter, salt, and vanilla extract.
3. Mix until a soft, crumbly dough forms.
4. Press the dough evenly into the bottom of the prepared baking pan.
5. Bake the crust for 18–20 minutes, until lightly golden around the edges.
6. While the crust bakes, whisk together the eggs, corn syrup, brown sugar, melted butter, vanilla extract, salt, and optional cinnamon until smooth.
7. Fold in the chopped pecans, making sure they're evenly coated in the sweet filling.
8. Remove the crust from the oven and carefully pour the pecan mixture over the warm crust.
9. Spread the filling evenly with a spatula so the pecans are distributed throughout.
10. Return the pan to the oven and bake for another 25–30 minutes, until the edges are set and the center has only a slight jiggle.
11. Remove from the oven and let the bars cool completely in the pan.
12. Refrigerate for 1–2 hours for cleaner slices, then lift out using the parchment paper and cut into squares.
✨ **Baking Tip:** Don't overbake! The pecan filling will continue to firm up as it cools, giving you that perfectly gooey, chewy texture.
🍨 **Serving Idea:** Enjoy these pecan pie bars with a scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of warm caramel sauce!
